Steps to order:
Call or text Gary at (870) 213-7149. Pay your $100 deposit to reserve your whole, half or quarter beef. He will reserve all or part of a steer for you. We accept cash, check, or PayPal.
Gary will finish your steer and deliver it to the processor in Mountain View. Our cattle are always kept on open pasture and fed hay. Finished steers are fed a custom grain blend for enhanced flavor and marbling.
You’ll be contacted when your steer is delivered to the processor. You will call the butcher and they’ll take down your instructions for custom cuts and packaging. The Marsolfs are great at walking you through cuts and package sizes that work for you and your family. Your beef will be processed, packaged, and frozen in a sub-zero freezer.
Your deposit is applied to your total charge, then the balance is due after processing. You will pick your packaged beef up directly from the processor or arrange with Gary to have him or one of the family deliver it for you.

Our beef costs $5.40 per pound, total cost calculated on hanging weight. Processing is free to you.
Pickup is in Mountain View or pre-arranged meeting.
Average weights and cost for beef:
Whole beef is 1000-1200 pounds live weight, yields a hanging weight around 650 pounds (~$3500) which will make about 500 pounds of finished meat, enough to fill 40 cubic feet of freezer space
Half beef is 500-600 pounds live weight, 325 pounds hanging weight (~ $1750), that’s around 250 pounds of packaged meat, so you’ll need about 20 cubic feet of freezer
Quarter beef is 250-300 pounds live weight, around 163 pounds per quarter hanging (~ $875), in the range of 125 pounds of beef, which will fit in a 10 cubic foot freezer.
2024 Steaks cut at 1 inch thick yield a 12-14 ounce boneless ribeye. Perfect, in our humble opinions.

Jenni stocks USDA inspected steaks and ground beef at her restaurant that you can purchase to take home and cook. Call Big Springs at (870)439-2900 for hours and availability. If you're interested in using Arkansas grown beef in your restaurant, we can set up a USDA inspected processing date for you for a whole beef. Costs are different, so give us a call to set that up. Beef purchased from Big Springs can be used in food service.

Our herds are limited to be sure that every animal has plenty of room to roam and graze.
Grain Finished.
Finished with high-quality, locally sourced grains for superior marbling and taste. Our animals are not “dry-lotted;” they remain on grass pastures during finishing. Grain supplements their already rich grass diet.
Sustainably Grown.
Our hay for winter forage is grown, cut, baled, and stored right on our farms.
